Spanakorizo - Spinach with Rice

This is such a simple meal to make. Like all things the quality of the ingredients is important.


2 x Bunches of Silverbeat or English spinach

1 onion finely diced

1 cup of white rice (short-grain or risotto)

1 cup of Olive Oil (we have used our Organic EVOO Armonikon)

lemon juice to taste

Salt & Pepper to taste


Wash silverbeat/spinach and chop into large pieces.

Saute the onions in a little of the olive oil until soft and add the spinach & salt & pepper.

Add the rice and mix well into the other ingredients.

Add a cup of water and half the olive oil.

Cook covered on low heat for approximately 20-30 minutes stirring frequently. 

Check the rice to ensure it has cooked.

Serve warm drizzled with olive oil and a wedge of lemon.
