Our traditional Greek Fava is so simple to make and you only need 4 ingredients.

Greek Fava is basically Yellow split pea puree. The simplest of meals to have on its own or as an accompaniment.
I just have mine with crusty bread, olive oil and a small bowl of olives. Like my dad used to have it.
This is traditional Greek Food and part of a true Mediterranean Diet. I remember my dad telling me stories on how this type of food sustained him & his siblings through the "Katohi" or Axis occupation of Greece 1941-1944.

500g of yellow split peas
1 x brown Onion whole
1 x red onion (for serving)
1 x clove of garlic
Organic Extra Virgin Olive Oil. This is important. My dad used to say "marry the fava". This meant bring out the best olive oil we had to drizzle on top.

Wash the yellow split peas and place in a large saucepan with approximately 1 1/2 litres of water.
Bring to the boil.
Drain and shower the yellow split peas under cold water.
Place back into the saucepan, fill with water making sure the peas are completely submerged. Add the whole brown onion, the clove of garlic and bring to a boil. Simmer and stir from time to time (you need about an hour). When the mixture softens remove the onion and garlic. The water should all have been absorbed. Add salt and pepper to taste and a drizzle of olive oil. Using an immersion blender pulse to a thick puree. (In my dad’s day they used a food mill).
Serve with crusty bread and diced red onion and off course a good serving of olive oil.
