Chicken Kalamon

Ingredients

5-6 Chicken drumsticks

Rice

Cherry tomatoes

Chicken Stock cube

1 Tablespoon Tomato Paste

Fresh Green Beans

Chopped Onion

Extra Virgin Olive Oil (We use our Armonikon)

Kalamon Olives

Method

In a large pot place approximately two litres of water and add the chicken and chicken stock.

Bring to the boil and lower heat to a simmer and place the lid on the pot.

Cook for approximately 40 minutes. 

Add a cup of rice and bring to the boil.

Cook until the chicken begins to fall off the bone and the rice is cooked.

In the meantime....

Gently heat the olive oil in a non stick frypan

Add the chopped onion and cook for a minute whilst stirring.

Add the roma tomatoes and the tomato paste (diluted with approx 1/4 cup of water)

Toss in the Green Beans

Simmer on low.

From the chicken pot take out the chicken and cut into bite size pieces and add to the frypan, add some of the chicken stock to the frypan, the chicken pieces and slowly start adding the rice.

Continue to cook adding chicken stock from the pot as needed.

Toss in Kalamon Olives along with some of the juices from our Kalamon Olive Jar.

And if available a must for dunking some crusty bread.
