One of my favourite dishes. So simple, no fuss and yet an extravaganza of taste.
Wash new potatoes in cold water. Place in a pot and boil until tender or when you can easily pierce with a fork.
Strain and allow to cool until warm enough to handle.
Cut in half. Add chopped chives and parsley and olive oil. Mix well and ready to serve.
These are great on their own or as an accompaniment to any meal.
