What do I do with my Organic Extra Virgin Olive oil? Cook offcourse!
The great thing with this recipe is you don’t need many ingredients and so simple to make. All you need is approximately 800g Sardines, salt and freshly ground black pepper, lemons, dried oregano and extra virgin olive oil.
I always ask the fish monger to clean my sardines as they will be ready to use without the fuss of having to clean them myself. Make sure to tell them to leave the heads on.
Start by preheating your oven to 200°C.
Place the sardines in a baking dish and sprinkle with the salt and pepper. Combine the juice of 2 lemons with 120ml of Extra Virgin Olive Oil and 120ml of water. Whisk these ingredients together and pour over the sardines. Shower with the dried oregano.
Place in the oven and bake for 20-25 minutes.
Make sure you have some crusty bread to scoop up the juices. Serve with a salad, or simple have them on their own.
